Christine and I worked together on the Cafe Project for Out & About.This was a social enterprise to enable disabled youngsters to come and learn about cooking and develop their social skills, among numerous other associated activities. I was so nervous on my first day, but Christine welcomed me with enormous warmth and humour and she put me at ease and we hit it off immediately and remained great friends. We had a lot of fun working on the project, Christine as Head Chef me as her side kick and student support. Daily, we would sit and chop vegetables for the soup and put the world to rights. We were actually total opposites but I think as we shared common ground with our personal lives and our shared love for good food........( and dogs of course ) our friendship was cemented.Christine was always incredibly supportive and was always there for me if I needed an ear usually after challenging weekends with my son and particularly when I lost my husband. We kept in touch after the Cafe Project closed and we would meet often either for a coffee on the waterfront or go to our favourite Bistro on the Quay for lunch. We would always try and nab the table by the window and sit and watch the fabulous boats on the marina. I will miss Christine
